This ground beef sweet potato cottage cheese bowl blends sweet, savory, and creamy in a high-protein, satisfying meal that’s perfect for busy weeknights or clean meal prep.
4–6 oz lean ground beef
1/2 cup cottage cheese (full-fat or low-fat)
1 small sweet potato, peeled and cubed
1/2 small avocado, sliced (optional)
1 tsp olive oil
1/2 tsp garlic powder
1/4 tsp smoked paprika
Salt and black pepper, to taste
1–2 tsp hot honey (optional)
Fresh cilantro or pickled onions for garnish (optional)
1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 20–25 minutes.
2. In a skillet, cook ground beef over medium heat until browned. Season with garlic powder, paprika, salt, and pepper.
3. Spoon cottage cheese into a bowl as your base.
4. Top with roasted sweet potatoes and cooked beef.
5. Add avocado, drizzle with hot honey, and garnish with cilantro or onions if desired.
